The apartment smells amazing right now
I’m making bolognese sauce for dinner, and a pot of chicken stock from leftover bones and veggies that have been taking up space in the fridge so I can make soup later this week. The whole house smells like tomato and garlic and chicken and goodness.

Flying Dog Raging Bitch IPA
We picked up a 6-pack of Flying Dog’s Raging Bitch IPA. It’s a Belgian-style imperial India Pale Ale. The aroma is sweet, malty, and earthy, much more so than you’d expect from an IPA. Bottled my porter today
I bottled my 8.5% Imperial porter today, and it tastes fantastic. I’m going to let it condition for a few months before I open it up.

Enjoying some festive beverages
We picked up a bottle each of Dogfish Head Olde School Barleywine and Midas Touch, both of which are fantastic. The barleywine had a pretty strong alcohol aroma, a really nice malty, smoky flavor with hints of toffee and caramel on the finish. The Midas Touch is substantially dryer, deceptively so at 9% abv. Sampled porter today
I took a sample of my porter today, and it’s really exciting to see how it’s progressing. It’s been in secondary for 9 days now over about 2 oz or oak chips. It’s got a little heavier mouthfeel than I had expected, but it’ll lighten up a bit once it’s bottled and carbed up. The flavor, however, is spot on. Porter in secondary
I racked my imperial porter to secondary, with about 2 oz of bourbon-soaked oak chips. After a week or so, I’ll start taking samples every few days to see how the oak flavor is coming along.

I’m doing a bourbon-barrel imperial porter this time around. It’s an extract brew with specialty grains. Here’s my recipe:
