I took a sample of my porter today, and it’s really exciting to see how it’s progressing. It’s been in secondary for 9 days now over about 2 oz or oak chips. It’s got a little heavier mouthfeel than I had expected, but it’ll lighten up a bit once it’s bottled and carbed up. The flavor, however, is spot on. It’s got a slight smokiness from the chocolate and crystal malts. There’s a good balance between malt and hops, with a bit of sweetness from the alcohol. Just over a week in, I’m starting to get a little bit of the oak flavor coming through. I’m going to leave it for another week, and probably bottle next Friday. I’m planning on entering it as a wood-aged beer in the Greg Noonan Memorial Homebrew competition in May.
